Beef and Guinness Stew
Serves 6 –
Ingredients:
vegetable oil
2 pounds lean stewing beef, cubed
teaspoon salt
Freshly ground pepper
2 large onions, coarsely chopped
large clove garlic, crushed
2 tablespoons each: tomato paste, beef bouillon
2 cups carrots, cut in chunks
1 cup celery, cut in chunks
1/2 pound mushrooms, coarsely chopped
1 sprig thyme
1 1/4 cups Guinness stout, about 1 bottle
First, season meat with the salt and pepper to taste. Brown meat on all sides with a of tablespoons of vegetable oil – probably best done in batches – and then add all the meat back into the pot when done. Add enough water to cover meat, then cover pot and simmer 1-2 hours – till the meat is tender. Simmer – do not boil.
Then add onions, garlic, tomato paste and beef bouillon and heat to a boil; add the carrots, celery, mushrooms, thyme and Guinness – Then simmer and additional hour.
You can season with some additional salt and pepper to taste.
