Quinoa Corn Salad
1 Cup of Quinoa
1 Pinch of Salt
1 1/2 Cups fresh, canned, or frozen sweet corn
1 cup of finely chopped red cabbage
1 medium cucumber, diced
1 1/2 cups cherry or grape tomatoes, halved
bring water to boil and add quinoa with salt
cover, reduce heat and simmer for 15 minutes
remove from stove and fluff with fork
place corn, tomatoes, cucumber, and cabbage in a mixing bowl
add the quinoa to the mixing bowl
