Sushi Sandwiches
“Nothing Fishy About Them!”
A great lunch for kids – and they can help make them too!
You will need:
2 slices of bread (white or whole wheat – your choice)
2 slices of ham or turkey
2 – 4 Tbs of cream cheese
A rolling pin
Cut the crust off the bread.
Roll the bread out .
Spread the cream cheese.
Lay your slice of ham/turkey so it is NOT over the edge of the bread.
Roll the bead up and when you get to the other end glue it with more cream cheese so it will not unroll.
Cut sandwich into three pieces and turn cut side up on the dish.
We love to serve them with fruit! YUM!

Butternut Squash Soup
Ingredients for 4-6 people
1 large butternut squash, peeled, seeded and cut into 2.5 cm/1″ cubes
3 strips of smoked bacon cut into thin slices
1 large sweet onion, chopped
Salt to taste
1 leek (white only), chopped
2 at least tbsp of honey - (we add more - it is a matter of taste)
1 liter (1 quart) chicken stock
3 stalks of celery, peeled and chopped
1 cup of crème fraiche or whipping cream
white pepper to taste
1. Sauté the sweet onion, bacon celery & leeks.
2. Add the peeled and seeded butternut squash and chicken stock. Simmer until the squash is soft.
3. Add the whipping cream, salt, pepper and honey. Blend until smooth - Yum!! (Even the kids eat this one!)
You can also put this soup through a strainer to make it thin - it becomes very elegant this way.
Garnish with chives and pancetta or even smoked duck.
