Irish Soda Bread
Recipe sent in by Elizabeth Benducci – This is her mom’s recipe who hails from County Sligo in Ireland.
2 c. all purpose flour
2 T. sugar
1 1/2 t. baking powder
1/2 t. baking soda
1/2 t. salt
2 T. butter
3/4 c. + 2 T. buttermilk
1/2 c. currants or raisins (optional)
In a bowl, combine the floour, sugar, baking powder, baking soda and salt. Cut the butter into the flour mixture with a pastry blender or two knives. Add the buttermilk and mix thoroughly into a soft dough. Add the currants. Knead the dough on a lightly foured board for about 3 minutes or until smooth. Form the dough into a 7″ flat round and place in a lightly oiled cake tin. Cut a cross about 1/2″ deep into the center of the round. Bake in a 375 degree over for 40 minutes. Cool on a wire rack.
